Avocado toast and glazed mushrooms

For 2 people

Preparation time: 10 min, cooking time: 5 min

  • 2 large slices of sourdough bread
  • 120g cottage cheese
  • 1 avocado
  • The juice of half a lime
  • 20 small Paris mushrooms cut in 4
  • 1 tbsp of olive oil
  • 1 tsp of cream of balsamic vinegar
  • Salt
  • Pepper

PREPARATION

  • Crush the avocado with a fork. Season with salt and pepper and add the lime juice. Mix. 
  • In a skillet, sauté the mushrooms. When they start to lose their water, add the olive oil and cook for 5 minutes while mixing. 
  • At the end of cooking, add the vinegar cream and glaze the mushrooms for 1 minute while stirring. 
  • On each slice of bread, place a layer of smashed avocado, one layer of cottage cheese and place the glazed mushrooms on the top.
