Chocolate Swirl Banana Bread

Preparation time : 15 minutes, Cooking time : 55 minutes

  • 1/2 cup chocolate chips
  • 2 cups flour
  • 1/2 cup brown sugar
  • 3/4 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 very ripe bananas
  • 1 tbsp sour cream
  • 2 large eggs beaten lightly
  • 90g butter
  • 1 tsp vanilla extract

PREPARATION

  • Melt the chocolate chips.
  • Preheat the oven to 180°C.
  • In a large bowl, whisk together the flour, the sugar, baking soda and powder and salt.
  • In an other bowl, whisk together the mashed bananas, cream, eggs, melted butter and vanilla.

  • Using a rubber spatula, lightly fold the banana mixture into the dry ingredients just until combined. (The batter will be thick and chunky).

  • Remove 1 cup of the batter to a separate bowl then add the melted chocolate to the bowl, stirring to combine.
  • Fill a buttered loaf pan with alternating scoops of the banana batter and the chocolate batter. Using a knife, swirl the batters together.

  • Bake the bread for 55 minutes, or until a toothpick inserted comes out clean.
  • Allow the loaf to cool in the pan for 5 minutes then transfer it to a cooling rack to cool completely.
