Baked Donuts

I have seen several times this idea of baked donuts on the net and I wanted to test them. I’m not a big fan of classic fried donuts, after one bite it makes me sick! I was suddenly intrigued by this recipe of baked donuts without adding unnecessary fat. The recipe is quite simple to make and I would say that the donuts looks a bit like a bun but with a different texture akin to that actually donuts. No frying removes the real taste of the donut that everyone knows but this recipe still remains a good alternative for pleasure by dividing at least by 2 the number of calories!
Baked Donuts
For 8 to 10 donuts
Préparation time : 20 minutes, Baking time : 9 minutes

- 320 g flour
- 14 g of fresh yeast
- 12 cl of whole milk + 2 tbsp
- 20g butter
- 50 g of granulated sugar
- 3 cl orange flower water
- 1 egg
- 1 pinch of salt
- melted butter + sugar (for finishing)

PREPARATION
- Warm the milk, add sugar and butter until all is melted. Let cool.
- In a bowl, mix the flour with the salt, and yeast. Make a well and add the egg and slightly warm milk and orange flower water.
- Knead for 4/5 minutes until the dough is smooth and elastic.
- Flour the bottom of a bowl and place the dough. Cover with a cloth and let stand at room temperature for 1 hour until the dough has doubled in volume.
- On a floured surface, place the dough and degas.
- Roll out with a rolling pin on 1.5 cm thick.
- Using 2 round cookies cutters, a large and a smaller, cut the donuts with the large one and with the smallest make a hole in the center.
- Place the donuts on a baking sheet lined with parchment paper and cover with a tea towel. Leave your dough rise 30 minutes.
- Preheat oven to 190 °. Put water in a dripping pan under the plate covered donuts.
- Brush the donuts with milk and bake for 9 minutes until lightly browned.
- Melt a little butter.
- Remove the donuts from the oven and, using a pastry brush, brush the cakes and roll in powdered sugar.
