Red lentils balls
For about twenty balls
Preparation time: 10 min, Cooking time: 10 min

- 150 g of red lentils
- 60 g of breadcrumbs
- 1 -2 eggs
- 1 small red onion
- 1 tbsp of parsley
- 1 pinch of turmeric and 1 pinch of ginger
- Salt, pepper
- Olive oil for cooking

PREPARATION
- Cook the red lentils in boiling and salted water for about 15 minutes.
- Drain the lentils and let cool.
- Meanwhile finely chop parsley and red onion.
- Pour the mixture into a bowl and mix with the bread crumbs.
- Add the red lentils, salt and pepper.
- Sprinkle with turmeric and ginger.
- Add an egg and mix.
- If the mixture is too dry and does not stick, then add a second egg.
- If on the contrary the balls do not hold (mixture too wet) add 1 tbsp of flour.
- Place the dough in the fridge for a few moments.
- Shape the balls and cook them in non-adhesive pan with a little olive oil until golden brown.
- Serve with a yogurt and herbs sauce.
