Kings’ crown

For a crown for 10

Preparation time: 20 min, rest time: 2h, cooking time: 30min

  • 500g of flour
  • 4 tbsp of granulated sugar
  • 1 pinch of salt
  • 20g of fresh yeast
  • 80g of soft butter, diced
  • 300ml warm milk
  • 1 beaten egg yolk
  • 2 tbsp of flaked almonds
  • 2 tbsp of sugar in grain

PREPARATION

  • In the bowl of a mixer, mix the flour, salt, sugar and yeast.
  • Add the butter and milk then knead everything into a smooth and supple dough.
  • Cover and let rise approx. 1h30 at room temperature, until the dough doubles in volume.
  • Take 8 portions of dough of approx. 60 g each, forming balls and placing the almond (bean) in one of them.
  • With the rest of dough, shape a big ball and put it on a plate covered with baking paper.
  • Place small balls all around the big one, cover and let rise a second time approx. 30 min.

  • Brush with egg yolk, sprinkle with flaked almonds and granulated sugar.

  • Bake for 30 minutes in preheated oven to 180 degrees C.
  • Take out the crown of the oven and let it warm up before to place on a rack for complete cooling.
