Kings’ crown
For a crown for 10
Preparation time: 20 min, rest time: 2h, cooking time: 30min

- 500g of flour
- 4 tbsp of granulated sugar
- 1 pinch of salt
- 20g of fresh yeast
- 80g of soft butter, diced
- 300ml warm milk
- 1 beaten egg yolk
- 2 tbsp of flaked almonds
- 2 tbsp of sugar in grain

PREPARATION
- In the bowl of a mixer, mix the flour, salt, sugar and yeast.
- Add the butter and milk then knead everything into a smooth and supple dough.
- Cover and let rise approx. 1h30 at room temperature, until the dough doubles in volume.
- Take 8 portions of dough of approx. 60 g each, forming balls and placing the almond (bean) in one of them.
- With the rest of dough, shape a big ball and put it on a plate covered with baking paper.
- Place small balls all around the big one, cover and let rise a second time approx. 30 min.
- Brush with egg yolk, sprinkle with flaked almonds and granulated sugar.
- Bake for 30 minutes in preheated oven to 180 degrees C.
- Take out the crown of the oven and let it warm up before to place on a rack for complete cooling.
