Butternut chicken curry

Here’s a new idea of a very simple and quick to make curry : a butternut chicken curry. To make the seasoning more peppery, I used pepper from Madagascar that friends offered me . This pepper: Voatsiperifery is found in southern Madagascar and grows on vines on the the tops of tall trees reaching 10 to 20 meters high. It goes well with steamed vegetables and fruits such as strawberries . The alliance with the sweetness of butternut squash is a real treat !
Butternut chicken curry
For 4 serving
Preparation time: 10 min, Cooking time: 30 min

- 400g chicken breast
- 400g butternut squash
- 1 onion
- 1 tsp of curry
- 1 pinch of Cayenne chili
- 200 ml coconut milk
- 100 ml water
- 3 turns of salt grinder
- 3 turns of Madagascar pepper grinder
- 1 tsp oil
- parsley

PREPARATION
- Mince the onion.
- Dice the chicken and the Butternut squash.
- In a small pot, cook the onion with oil until golden brown, 2 to 3 minutes.
- Add the chicken, salt and pepper, chili and curry. Cook the chicken until golden brown for 4 to 5 minutes.
- Add the coconut milk and water and bring to boil.
- Cook at low heat for 5 minutes.
- Add the butternut squash and let boil gently for 15 minutes or until the squash is melting.
- Taste and add salt, pepper, curry or chili if necessary.
You can serve this curry with rice and sprinkle parsley over your plate.
