Sweet potato and red lentil curry

For 6 people

Preparation time: 15 min, cooking time: 30 min

  • 4 cubed sweet potatoes
  • 200g of red lentils
  • 1 vegetable broth cube
  • 1250 ml of water
  • 250 ml of coconut milk
  • 3 Tsp red thai curry paste
  • 1 chopped onion
  • 2 tbsp of grated ginger
  • 1 tbsp masala
  • salt and pepper
  • 3 tbsp of tomato paste

PREPARATION

  • Place all the ingredients except the coconut in a large saucepan.

  • Cover and bring to a boil.
  • Lower the fire and cook covered for about 20 min.
  • Stop cooking and add the coconut milk.
  • Stir and cover for 5 minutes.
  • Serve with brown rice and topped with strips of red onion and parsley.
