Sweet potato and red lentil curry

Preparation time: 15 min, cooking time: 30 min

- 4 cubed sweet potatoes
- 200g of red lentils
- 1 vegetable broth cube
- 1250 ml of water
- 250 ml of coconut milk
- 3 Tsp red thai curry paste
- 1 chopped onion
- 2 tbsp of grated ginger
- 1 tbsp masala
- salt and pepper
- 3 tbsp of tomato paste

PREPARATION
- Place all the ingredients except the coconut in a large saucepan.
- Cover and bring to a boil.
- Lower the fire and cook covered for about 20 min.
- Stop cooking and add the coconut milk.
- Stir and cover for 5 minutes.
- Serve with brown rice and topped with strips of red onion and parsley.
