Eton mess vegan with strawberries
For 4 large glasses

- 250g strawberries
- 200ml soy cream
- 1 tsp of liquid vanilla bean
- 1 vanilla sugar pack
- 8 meringues

PREPARATION
- Mix 100g of strawberries with a little bit of water.
- Dice the remaining strawberries.
- Whisk the very cold soy cream into a chantilly and add the liquid vanilla and vanilla sugar when the cream begins to hold well.
- In 4 large glasses, deposit a first layer of meringue reduced in pieces (1 meringue in each glass).
- Then pour 1 large tablespoon of whipped soy cream in each glass.
- Add some strawberries and pour 1 tablespoon of strawberry coulis.
- Repeat the operation: meringue, whipped cream, strawberries and coulis then place a last tablespoon of whipped cream in the center.
- Decorate with pieces of meringues and some strawberries.
- Place in the refrigerator before tasting.
