Eton mess vegan with strawberries

For 4 large glasses

  • 250g strawberries
  • 200ml soy cream
  • 1 tsp of liquid vanilla bean
  • 1 vanilla sugar pack
  • 8 meringues

PREPARATION

  • Mix 100g of strawberries with a little bit of water.
  • Dice the remaining strawberries.
  • Whisk the very cold soy cream into a chantilly and add the liquid vanilla and vanilla sugar when the cream begins to hold well.

  • In 4 large glasses, deposit a first layer of meringue reduced in pieces (1 meringue in each glass).
  • Then pour 1 large tablespoon of whipped soy cream in each glass.

  • Add some strawberries and pour 1 tablespoon of strawberry coulis.

  • Repeat the operation: meringue, whipped cream, strawberries and coulis then place a last tablespoon of whipped cream in the center.
  • Decorate with pieces of meringues and some strawberries.
  • Place in the refrigerator before tasting.
