Friandises de l’Ecureuil

For 20 bites

Preparation time : 10 min, cooking time : 15 à 20 minutes

  • 100g soft butter
  • 90g granulated sugar
  • 1 egg
  • 60g cocoa powder
  • 1 tsp coffee powder
  • 150g almonds and/or hazelnuts in small pieces (100g could be enough)
  • 115g flour
  • For the icing : 100g icing sugar, 2 egg whites, 1 tsp lemon juice

PREPARATION

  • Preheat oven to 180°C.
  • Mix the soft butter with the granulated sugar.

  • Add the egg and mix.
  • Add the chocolate, the coffee, hazelnuts and crushed almonds.

  • Mix until obtaining an homogenous mixture.

  • On a plate covered with a baking sheet, roll out the mixture to 1 cm thickness and form a rectangle or a square.

  • Bake for 20 minutes, 15 minutes could be enough for softer biscuits.
  • After cooking, cut the edges to have a perfect rectangle or square.

  • Prepare the icing. Whisk the icing sugar with egg whites. Add the lemon juice and whisk again.

  • Spread the icing on the top of the warm biscuit.

  • Cut into slices or squares.

  • Let cool and wait 24h hours until the icing is completely dry.
