Friandises de l’Ecureuil

Preparation time : 10 min, cooking time : 15 à 20 minutes

- 100g soft butter
- 90g granulated sugar
- 1 egg
- 60g cocoa powder
- 1 tsp coffee powder
- 150g almonds and/or hazelnuts in small pieces (100g could be enough)
- 115g flour
- For the icing : 100g icing sugar, 2 egg whites, 1 tsp lemon juice

PREPARATION
- Preheat oven to 180°C.
- Mix the soft butter with the granulated sugar.
- Add the egg and mix.
- Add the chocolate, the coffee, hazelnuts and crushed almonds.
- Mix until obtaining an homogenous mixture.
- On a plate covered with a baking sheet, roll out the mixture to 1 cm thickness and form a rectangle or a square.
- Bake for 20 minutes, 15 minutes could be enough for softer biscuits.
- After cooking, cut the edges to have a perfect rectangle or square.
- Prepare the icing. Whisk the icing sugar with egg whites. Add the lemon juice and whisk again.
- Spread the icing on the top of the warm biscuit.
- Cut into slices or squares.
- Let cool and wait 24h hours until the icing is completely dry.
