Fusilli with vegan pea cream

  • 200g of raw fusilli
  • 1 handful of frozen peas
  • 20 cashew nuts
  • 50ml of hot water
  • Salt and pepper

PREPARATION

  • Cook pasta al dente according to the direction on the packet
  • During this time, cook in boiling salted water the peas for 8 minutes.
  • Drain the peas and place them in the bowl of a mixer.
  • Add the cashews and hot water.
  • Add salt and pepper and mix all until obtaining a peas cream.
  • Drain the pasta and put back in the pan.
  • Add 2/3 of the cream and stir all together over soft fire.
  • Serve in 2 bowls and add a large spoon of peas cream on each bowls.
