Frangipane cake (without butter)

For 8 parts
Preparation time: 5 min, cooking time: 20 min to 25 min

  • 100g of apple sauce
  • 100g of sugar
  • 200g of ground almonds
  • 4 eggs
  • 2 tbsp rum (optional)
  • 1 tsp bitter almond
  • Flaked almonds and icing sugar

PREPARATION

  • Mix all ingredients vigorously (except the flaked almonds and icing sugar) in a salad bowl and that’s it!

  • Pour into a dish with the bottom covered with a greaseproof paper disc to facilitate un molding.
    Note: use a dish about 21 cm in diameter, bigger the cake is thinner the cake will be or you will need to double the quantities.

  • Sprinkle with flaked almonds.

  • Bake 20 to 25 min in an oven preheated to 200 degrees C.
  • Remove from oven and let cool before unmold.
  • Take out of the mold and let cool completely on a grid.
  • Sprinkle with icing sugar.

  1. Rapidement devenu l’un des gâteaux préférés de la maison. Vite fait, délicieux… Je l’ai customisé aux noisettes, et j’envisage même une tentative en remplaçant la poudre d’amande par de la noix de coco… ça pourrait justifier un glaçage au chocolat dessus (toutes les raisons sont bonnes…:-D)
