Green spinach soup

For 4 people

Preparation time: 10 min, cooking time: 15 min

  • 100g of baby spinach
  • 50g of onions
  • 100g of potatoes
  • 500g of water
  • 20ml of olive oil
  • 1 stock cube
  • Salt
  • Pepper
  • Toasted buckwheat seeds (kasha)

PREPARATION

  • In a casserole saute the chopped onion in olive oil for a few minutes.
  • Add spinach and peeled potato cut into large pieces.
  • Pour the water and add the broth and bring to a boil.
  • Lower the heat and cook for 15 minutes.
  • Mix together and season with salt and pepper.
  • Serve in bowls and sprinkle with some toasted buckwheat seeds.
