Healthy Chocolate Peanut Butter Banana Muffins

For 6 large muffins

Preparation time: 10 min, cooking time: 20min

  • 2 bananas, mashed
  • 2 eggs
  • 2 tbsp creamy peanut butter
  • 1 tsp vanilla extract
  • 180g gluten-free oat flour
  • 50g brown sugar
  • 25g cacao powder
  • 1 tsp baking powder
  • 70g chocolate chips

PREPARATION

  • Preheat oven to 180 degrees and line a muffin tin with liners (or grease well)
  • In a large bowl, mix together banana, eggs, peanut butter and vanilla extract until creamy
  • Mix in the flour, sugar, cacao powder and baking powder until smooth
  • Fold in chocolate chips then add batter to muffin tin
  • Drizzle more peanut butter on top of the muffins to get a swirl if desired then bake for about 20-25 minutes (or until fully cooked!)
