Healthy Chocolate Peanut Butter Banana Muffins
For 6 large muffins
Preparation time: 10 min, cooking time: 20min

- 2 bananas, mashed
- 2 eggs
- 2 tbsp creamy peanut butter
- 1 tsp vanilla extract
- 180g gluten-free oat flour
- 50g brown sugar
- 25g cacao powder
- 1 tsp baking powder
- 70g chocolate chips

PREPARATION
- Preheat oven to 180 degrees and line a muffin tin with liners (or grease well)
- In a large bowl, mix together banana, eggs, peanut butter and vanilla extract until creamy
- Mix in the flour, sugar, cacao powder and baking powder until smooth
- Fold in chocolate chips then add batter to muffin tin
- Drizzle more peanut butter on top of the muffins to get a swirl if desired then bake for about 20-25 minutes (or until fully cooked!)
