Homemade granola with chocolate chips

Preparation time : 10 min, cooking time: 20 min

  • 200g oats
  • 100g chocolate chips
  • 50g cashew nuts
  • 50g almonds
  • 40g grated coconut
  • 75g honey
  • 20g coconut oil
  • 1 vanilla bean
  • 1/2 tsp salt

PREPARATION

  • Preheat oven to 160°C.
  • Chop the cashew nuts.

  • In a bowl mix together all the ingredients except the coconut oil, honey and chocolate chips.

  • In a saucepan, heat the coconut oil over low heat. When the coconut is liquid add the honey and stir until combined. Pour over the previous mixture.

  • Spread with a thin layer on a plate covered with a baking sheet.

  • Bake for 20 minutes and stir every 10 min.

  • Leave to cool and when the granola is completely cold add the chocolate chips.

  • Pour in an airtight jar.
