Madeleines au chocolat

And then are the famous chocolate madeleines. Of course you can try the recipe without the chocolate frosting but it’s still more greedy!

Chocolate Madeleines 

16 madeleines

Preparation time: 15 min, Cooking time: 15min, Refrigeration: 2h

  • 80g flour
  • 80g demi salted butter
  • 80g sugar
  • 2 eggs
  • 1/2 tbsp self raising
  • 3 tbsp lemon juice
  • 1/2 lemon zest
  • 60g dark chocolate

PREPARATION

  • Melt the butter.
  • Whisk the eggs with sugar until a white mixture.
  • Add the flour, salt, melted butter, lemon juice and zest. Mix well. (1)

  • Place the dough in the fridge for 1 hour. (2)

  • Pre-heat the oven to 190°.
  • Divide the dough in a greased madeleine pan and bake for 15 minutes. (3)

  • Cool the madeleines.
  • Melt the chocolate in a bain-marie.
  • In the cleaned madeleine pan, brush the moulds generously with chocolate. (4)

  • Place the madeleines in the pan and refrigerate until the chocolate freezes. (5)

  • Carefully remove from the mould. (6)

Madeleines are ready to be enjoyed!

You can serve with a coffee mascarpone mousse (recipe in the dessert category).
