Mini roasted zucchinis, cherry tomatoes and Manouri

  • 400g mini zucchinis
  • 10 cherry tomatoes
  • 100g manouri (greek cheese, close to Feta cheese but a bit harder)
  • 1 handful of pumpkin seeds
  • 1 rosemary stick
  • Salt and pepper
  • Olive oil

PREPARATION

  • Preheat the oven to 200°C.
  • Wash the zucchinis and cherry tomatoes.
  • Oil a baking dish and lay down the zucchinis and the cherry tomatoes split in 4.

Mini courgettes rôties, tomates et Manouri

  • Sprinkle with the crumbled Manouri  and the pumpkin seeds.
  • Put over the rosemary stick.
  • Pour a trickle of on the vegetables.
  • Add salt and pepper.
