Mirabelle plums tart tatin
For 12 tartlets

- 90g flour
- 75g almond powder
- 75g soft butter
- some water if necessary
- 100g acacia honey
- 30 mirabelle plums
- 1 knob of butter
- some flower pollen

PREPARATION
- Mix the flour and the almond powder with the soft butter.
- Add a bit of water if necessary and form a ball.
- Put the pastry ball in the fridge for 10 minutes.
- In a saucepan, melt the honey with butter and add the mirabelle plums sliced in half.
- Let cook for 10 minutes until the mirabelle plums are melting.
- Spread the mirabelle plums in a muffin tin and add one teaspoon of melted honey.
- Place the tin in the fridge for 20 minutes.
- Roll out the pastry and make rounds with a cookie cutter.
- Prick them with a fork.
- Place on the moulds and carefully close them by sealing.
- Let cool in the fridge 20 minutes.
- Preheat oven to 180°C.
- Bake for 20 minutes.
- Take out the tartlets from the oven and let cool 5 minutes.
- Let cool in the fridge for 20 minutes.
- Take the tartlets out of the mould and sprinkle with flower pollen.
You can pour the tartlets with the remaining melted honey and you can serve warm or cold with a spoon of vanilla ice cream.
