Mirabelle plums tart tatin

For 12 tartlets

  • 90g flour
  • 75g almond powder
  • 75g soft butter
  • some water if necessary
  • 100g acacia honey
  • 30 mirabelle plums
  • 1 knob of butter
  • some flower pollen

PREPARATION

  • Mix the flour and the almond powder with the soft butter.

  • Add a bit of water if necessary and form a ball.

  • Put the pastry ball in the fridge for 10 minutes.
  • In a saucepan, melt the honey with butter and add the mirabelle plums sliced in half.

  • Let cook for 10 minutes until the mirabelle plums are melting.
  • Spread the mirabelle plums in a muffin tin and add one teaspoon of melted honey.

  • Place the tin in the fridge for 20 minutes.
  • Roll out the pastry and make rounds with a cookie cutter.
  • Prick them with a fork.

  • Preheat oven to 180°C.
  • Bake for 20 minutes.

  • Take the tartlets out of the mould and sprinkle with flower pollen.
