Strawberry ricotta mousse
For 4 verrines
Preparation time: 20min, refrigeration time: 1h

- 200g fresh ricotta
- 120g of strawberries
- 30g orange blossom honey
- The zest of a lemon
- Optional for dressing: shortbread cookies, meringues, diced strawberries

PREPARATION
- Mix the ricotta, strawberries and honey and add the lemon zest.
- Pour the mousse into a pastry bag and dress in verrines with for example a layer of crumbled shortbread cookies at the bottom of the verrine.
- Add pieces of meringues and pieces of strawberries on top if desired.
- Place in the fridge for 1 hour before tasting.
