Banana Oat Chocolate Chunk Muffins
For 12 muffins
Preparation Time 20 minutes, Cooking Time 15 minutes
Flour Mixture

- 1 1/2 cups Whole wheat Flour
- 1/4 cup Brown sugar
- 1 cup Rolled Oats
- 1 tsp Baking Soda
- 2 tsp Baking Powder
- 3/4 tsp Salt

Banana Mixture

- 1 Egg
- 3/4 cup Milk Dairy or Almond milk
- 1 tsp Pure Vanilla Extract/Paste
- 1/3 cup Coconut Oil
- 1 cup mashed Bananas 2-3 overripe bananas, depending on their size
- 3/4 cup chopped Walnuts
- 3/4 cup Chocolate Chunks

PREPARATION
- Preheat oven to 200°C.
- Grease a 12-cup standard muffin tin.
- In a medium bowl combine flour, sugar, oats, baking soda, baking powder, and salt. Set aside.
- In a large bowl beat the egg with a fork.
- Stir in the milk, vanilla extract, and oil.
- Add the mashed banana to the egg mixture and stir to combine.
- Using a wooden spoon, gently fold in the flour mixture into the banana mixture.
- Once combined, gently fold in the chocolate and chopped nuts.
- Pour the preparation in the tin and top each muffin with a sprinkle of oats, nuts, and chocolate
- Bake for 15-20 minutes until toothpick comes out clean.
- Set on cooling rack and enjoy!

Très bonne recette, merci. Évidemment, comme toujours j ai un peu fait à ma manière, n ayant pas assez de bananes j ai écrasé 2 poires, à la place de la farine complète j ai mis farine de coco et farine de riz et J ai mis du lait de soja.. Résultat parfait, sans gluten, sans lactose et sans sucre raffiné, tout ce que j aime, et tout le monde a aimé aussi….. Je n en ai plus, du coup je vais la refaire aujourd’hui…
