Pasta with sweet potato and carrot cream
For 2 people
Time of preparation: 10min, time of cooking: 15min.

- 200g of pasta
- 2 handles of spinach sprout
- 1 / 2 sweet potato
- 1 large carrot
- 150ml of oat cream
- olive oil
- salt and pepper
- pecorino (not for vegan)

PREPARATION
- Peel and cut the carrot and the Sweet potato in small pieces.
- Plunge these pieces in a pan of salted boiling water and cook until the pieces are tender (15 min).
- In parallel start cooking the pasta in a pot of boiling salted water and cook the time indicated on the package.
- When the pieces of sweet potato and carrot are cooked, drain them and place in the bowl of a Mixer.
- Then add the oat cream, salt and pepper and mix again. Reserve.
- Drain the pasta.
- In the pan having served to cook the pasta to cook the spinach in a drizzle of olive oil.
- Add pasta to spinach, mix and then add the sweet potato cream and carrot.
- Mix and adjust seasoning if necessary.
- Serve with a little grated pecorino on top of the pasta
