Pickles

For a jar of pickles
Preparation time: 10 min, cooking time: 10 min

I give you here the recipe of my brine to make my pickles that you can use with all kinds of vegetables / herbs / spices combination.
To give you some ideas here are the associations that I have already tested: red onions / chives / Madagascar pepper, cucumber / chives / pepper flakes, carrots / thyme / spring onion / mustard seeds, multicolored beets / rosemary / pepper flakes .
The vegetables should be washed, peeled and cut into thin slices.

 

Quantity for a jar

  • 1 cup of water
  • 1 cup of cider vinegar (or any other vinegar to vary the flavors)
  • 2 tsp of salt
  • 1 tsp of sugar

PREPARATION

  • For all recipes, prepare ingredients and place in a clean glass jar.
  • Prepare brine by combining all brine ingredients in saucepan over medium-high heat. Heat to a simmer until sugar and salt are dissolved.
  • Remove from heat and pour brine directly into glass jar with other ingredients. Make sure to cover produce completely. Seal jars and refrigerate.
  • You can keep your pickles up to 2 months.

  1. Bonjour…pardonnez mon ignorance mais à quoi correspond une CUP dans la recette saumure pour pickles ? Merci

    • Bonjour Stephanie,
      Il n’y a pas de problème! Une cup est une mesure américaine qui correspond à une tasse (un petit mug de thé). Il existe dans le commerce ces ustensiles qui se présentent sous forme de récipients doseurs. Vous trouverez aussi sur internet les correspondances entre cup et grammes. Cette unité américaine n’est pas très précise et c’est tout l’intéret d’utiliser ces cups. Dans la patisserie par exemple et precisément dans les patisseries américaines, les ingrédients ne sont pas mesurés au gramme près et sont également en général mélangés sans exagération pour conserver l’aspect grumeleux qui donnent le moelleux à ces patisseries! Rien à voir avec la patisserie traditionnelle francaise 😉
