Homemade ravioli

In this recipe of ravioli , everything is homemade : stuffing, ravioli dough and tomato sauce.If the idea of making your ravioli dough scares you, you can always use fresh lasagna sheets. To fix the dough, use an egg yolk . I still advise to try to make your dough, it’s not really difficult and we’re so proud of ourselves after 😉
Homemade ravioli
For 4 servings
Preparation time: 30min, Cooking time: 55min, Time to rest: 30min

- 200g minced beef
- 100g minced porc
- 1 onion
- 1 small carrot
- 1 celery stick
- 5 eggs
- 60g grated parmesan
- 400g flour
- 200ml red wine
- 150ml water
- 1 stock
- 2 tbsp olive oil
- 1 pinch of salt
- 1 sugar
- 2 cans of tomatoes pulp

PREPARATION
- Peel and minced the onion.
- Peel and diced the carrot.
- Diced the celery
- In a skillet , cook the onion , carrot and celery in 1 tbsp olive oil for 5 minutes or until golden brown.
- Add beef and porc meet and cook few minutes.
- Add the red wine, water and stock.
- Cook 30 minutes without cover and stir regularly.
- Mix everything coarsely and add the Parmesan and beaten egg. Let cool.
- In a bowl,mix the flour , the remaining 4 beaten eggs and a tablespoon of water . Knead by hand until the dough is smooth . Form a ball.
- Wrap the dough and let stand 30 minutes at room temperature.
- Meanwhile, in a saucepan heat the tomato pulp with a tablespoon of olive oil and sugar. Add salt and pepper.
- Divide the dough into 4 equal parts and then roll out the pieces of dough trying to form a very thin rectangle on a floured surface .
- On 2 rectangles of dough , spread the stuffing in small piles 2cm spaced.
- Cover with 2 sheets of remaining dough and then join together with the fingers.
- Cut the ravioli and flour them.
Rq : Ravioli will expand during cooking , so try to make small dumplings ! I was quite surprised by the size of mine. If you still have stuffing you can pour into your tomato sauce.

Join together with the fingers.
- Cook the ravioli for 12 to 15 min in salted water.
- Drain the ravioli.
- Pour the ravioli in tomato sauce to warm them up.
Serve the ravioli covered with tomato sauce. Sprinkle with grated Parmesan cheese and chopped basil.
