Raw beetroot and apples salad
For 2 people

- 1 large pealed raw beetroot
- 1 apple without seeds
- A handful of walnuts
- 2 tbsp of ricotta
- 1 handful of cooked beans
- 2 eggs
- A few bunch of chives
- 1 tbsp of oil
- 1 tsp white balsamic vinegar
- Salt and pepper

PREPARATION
- Bring a pot of water to a boil.
- Gently lay the eggs in the boiling water and cook for 7 minutes for hard-boiled eggs.
- Grate the apple then the beetroot.
- Place the grated beet in a bowl and mix with the oil and vinegar. Add salt and pepper.
- Place the beet on the plate and add the grated apples.
- Add crushed walnuts, beans, ricotta and eggs cut in 2.
- Add salt and pepper and a little chives on the whole.
