The sweet potato is a starchy with a sweet taste reminiscent of chestnuts . The color of the skin may be brown , orange, purple / crimson , light brown / beige or yellow / ocher. In the flesh of the tuber , its color can be purple, red / vermilion , orange, yellow-red , pinkish -white / milky white or beige . The less sugary sweet potatoes are those whose flesh is white or pale yellow. The sweet potato is rich in minerals and vitamins. It contains a lot of beta -carotene , as carrots.
The combination of carrot and sweet potato in a soup is a good way to get your fill of vitamins and an easy way to eat vegetables.
Carrot and sweet potato soup
For 4 servings

- 1 onion
- 500g carrots
- 300g sweet potato
- 700ml water
- 1 stock Kub or
- 1 tbsp olive oil
- Salt and pepper
- 2 tbsp light cream

PREPARATION
- Peel and mince the onion.
- Peel and cut the carrots into pieces.
- Peel and cut the sweet potato into pieces.
- In a casserole , cook the chopped onion in a tablespoon of olive oil until golden brown.
- Add carrots and sweet potato and cook a few minutes.
- Pour with water and add the stock. Stir and bring to boil.
- Cover and reduce heat . Cook for 30 minutes or until the sweet potato and carrots are tender .
- Mix with a plunger mixer.
- Add 2 tbsp of cream. Add salt and pepper if necessary and mix one more time.
