Apricots Streusel

Cake

- 250g flour
- 80g sugar
- 100g soft butter
- 2 eggs
- 1 baking powder
- 100ml milk
- 1 vanilla sugar
- 5 apricots (fresh or in a can)

Streusel

- 120g flour
- 90g sugar
- 70g butter
- 1 tsp cinnamon

PREPARATION
- Whisk the eggs with sugar, flour, soft butter, vanilla sugar, baking powder, milk.
- Butter a mould and pour the mixture inside.
- Cut the apricots in 4 and place on the the top of the mixture.
- Prepare the streusel by mixing flour, sugar and cinnamon in a bowl.
- Melt the butter and pour on the flour mixture by mixing with a fork. Small balls are getting formed.
- Put the streusel on the apricots and bake for 40 min at 180°C.
- The edge of a knife must get out clean.
- Take the cake out of the mould and let cool down before eating.
