Gluten free plum tart with pollen of flowers

  • 100 g of gluten-free mix flour
  • 80 g of rice flour
  • 30 g of hazelnuts or almonds powder
  • 2 tbsp olive oil
  • 30 g blond sugar
  • 1 egg
  • 40 ml water
  • About 20 plums
  • 1 tbsp of apricot jam
  • 2 tbsp of honey
  • Pollen of flowers

PREPARATION

  • In the bowl of a robot, mix the flours, hazelnut or almond powder, egg and oil.
  • Add water gradually (all the water may not be needed) until the dough forms a ball.
  • Spread the dough on a parchment paper and cut out with a large baking circle.
  • Place the dough with the parchment paper on an oven rack. Spread the apricot jam on the dough.
  • Cut the plums in half and remove the stones.
  • Cut the halves of plums again in half.
  • Place the quarters plums on the side of the jam-covered dough from the outside edges.

  • Continue to the center of the dough.

  • Drizzle a tbsp of honey and bake for 40 minutes in an oven preheated to 180 degrees.
  • When the pie is baked, take out the pie from the oven and pour the last tbsp of honey.

  • When the pie is cold, sprinkle it with pollen of flowers.
