Gluten free plum tart with pollen of flowers

- 100 g of gluten-free mix flour
- 80 g of rice flour
- 30 g of hazelnuts or almonds powder
- 2 tbsp olive oil
- 30 g blond sugar
- 1 egg
- 40 ml water
- About 20 plums
- 1 tbsp of apricot jam
- 2 tbsp of honey
- Pollen of flowers

PREPARATION
- In the bowl of a robot, mix the flours, hazelnut or almond powder, egg and oil.
- Add water gradually (all the water may not be needed) until the dough forms a ball.
- Spread the dough on a parchment paper and cut out with a large baking circle.
- Place the dough with the parchment paper on an oven rack. Spread the apricot jam on the dough.
- Cut the plums in half and remove the stones.
- Cut the halves of plums again in half.
- Place the quarters plums on the side of the jam-covered dough from the outside edges.
- Continue to the center of the dough.
- Drizzle a tbsp of honey and bake for 40 minutes in an oven preheated to 180 degrees.
- When the pie is baked, take out the pie from the oven and pour the last tbsp of honey.
- When the pie is cold, sprinkle it with pollen of flowers.
