Chicken and mushroom pie

I love the pies! So today, I propose a pie with chicken and Paris mushrooms. Of course, we’ll make our homemade dough and with organic products: flour and olive oil. We try to limit fat intake by modifying the basic recipe of the dough, lightening cream and avoiding to have a heavy hand on cheese! We serve this pie with a light salad of your choice such as a tomatoes salad from the garden!

Pastry

- 250g flour
- 100ml olive oil (80ml for a light recipe. You can go further by replacing the oil with 100ml light crème fraiche)
- 100 ml hot water
- 1 tsp baking powder
- pinch of salt

Cream

- 200g chicken breast
- 400g Paris mushrooms
- 300ml heavy crème fraiche (low fat crème fraiche to lighten the recipe). I used the Bulla crème fraiche, The Bulla cooking cream is also OK.
- Salt and pepper
- Parsley
- 30g cheddar. Emmenthal is the real ingredient but you will have difficulties to find it!

Preparation
Cream
- Chopped finely the parsley.
- In a bowl mix the cream, eggs, parsley, salt and pepper.
- Dice finely the chicken and cook until brown. Add salt and pepper. Put aside.
- Remove the skin and feet of the mushrooms. Cut the caps into small pieces and sweat over high heat without fat until mushrooms have gave out their water. Add salt and pepper. Put aside.
Pastry
- In a bowl, mix flour, oil, salt, baking powder and water.
- Form a ball.
- Pre heat the oven to 200°C.
- Roll out the dough to 4 to 5 mm layer. Butter a pie dish and garnish with the dough.
- Bake the dough for 15 to 20 minutes after having placed dried beans on a parchment paper.
- Remove the dough from the oven and remove the beans.
- Spread the mushrooms and chicken on the pastry.
- Pour the cream gently on the mushrooms and chicken and sprinkle the cheddar leftover.
- Bake for 30 minutes or until golden brown.
You can serve the pie with a tomatoes salad.
