Strawberry ricotta mousse

For 4 verrines Preparation time: 20min, refrigeration time: 1h

Ingrédients

  • 200 g fresh ricotta
  • 120 g of strawberries
  • 30 g orange blossom honey
  • The zest of a lemon
  • Optional for dressing: shortbread cookies meringues, diced strawberries

Instructions

  1. Mix the ricotta, strawberries and honey and add the lemon zest.
  2. Pour the mousse into a pastry bag and dress in verrines with for example a layer of crumbled shortbread cookies at the bottom of the verrine.
  3. Add pieces of meringues and pieces of strawberries on top if desired.
  4. Place in the fridge for 1 hour before tasting.
