Strawberry ricotta mousse

fresh ricotta

of strawberries

g
orange blossom honey

The zest of a lemon

Optional for dressing: shortbread cookies
meringues, diced strawberries

Mix the ricotta, strawberries and honey and add the lemon zest.

Pour the mousse into a pastry bag and dress in verrines with for example a layer of crumbled shortbread cookies at the bottom of the verrine.

Add pieces of meringues and pieces of strawberries on top if desired.

Place in the fridge for 1 hour before tasting.
