Kings' crown

For a crown for 10 Preparation time: 20 min, rest time: 2h, cooking time: 30min

Ingrédients

  • 500 g of flour
  • 4 tbsp of granulated sugar
  • 1 pinch of salt
  • 20 g fresh yeast
  • 80 g of diced soft butter
  • 300 ml warm milk
  • 1 beaten egg yolk
  • 2 tbsp of flaked almonds
  • 2 tbsp of sugar in grain

Instructions

  1. In the bowl of a mixer, mix the flour, salt, sugar and yeast.
  2. Add the butter and milk then knead everything into a smooth and supple dough.
  3. Cover and let rise approx. 1h30 at room temperature, until the dough doubles in volume.
  4. Take 8 portions of dough of approx. 60 g each, forming balls and placing the almond (bean) in one of them.
  5. With the rest of dough, shape a big ball and put it on a plate covered with baking paper.
  6. Place small balls all around the big one, cover and let rise a second time approx. 30 min.
  7. Brush with egg yolk, sprinkle with flaked almonds and granulated sugar.
  8. Bake for 30 minutes in preheated oven to 180 degrees C.
  9. Take out the crown of the oven and let it warm up before to place on a rack for complete cooling.
