Pea, parsley, pistachio and pomegranate salad

Ingrédients

  • 100 g frozen peas
  • 1 handful of pomegranate
  • 1 handful of pistachio
  • 1 handle of purslane
  • 1 bunch of parsley
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp mango juice
  • Salt and pepper

Instructions

  1. Dip the frozen peas in hot water for a few moments then drain them.
  2. Chop half of the pistachios.
  3. Chop the parsley.
  4. Prepare the vinaigrette in a small salad bowl by mixing olive oil, vinegar and mango juice. Add salt and pepper.
  5. Add to the salad bowl, the drained peas, the grains of pomegranate, pistachios, purslane and parsley.
  6. Mix the whole and the salad is ready.
