Gluten free plum tart with pollen of flowers

Preparation time: 20min, cooking time: 40min

Ingrédients

  • 100 g of gluten-free mix flour
  • 80 g of rice flour
  • 30 g of hazelnuts or almonds powder
  • 2 tbsp olive oil
  • 30 g blond sugar
  • 1 egg
  • 40 ml water
  • About 20 plums
  • 1 tbsp of apricot jam
  • 2 tbsp of honey
  • Pollen of flowers

Instructions

  1. In the bowl of a robot, mix the flours, hazelnut or almond powder, egg and oil.
  2. Add water gradually (all the water may not be needed) until the dough forms a ball.
  3. Spread the dough on a parchment paper and cut out with a large baking circle.
  4. Place the dough with the parchment paper on an oven rack. Spread the apricot jam on the dough.
  5. Cut the plums in half and remove the stones.
  6. Cut the halves of plums again in half.
  7. Place the quarters plums on the side of the jam-covered dough from the outside edges.
  8. Continue to the center of the dough.
  9. Drizzle a tbsp of honey and bake for 40 minutes in an oven preheated to 180 degrees.
  10. When the pie is baked, take out the pie from the oven and pour the last tbsp of honey.
