Green spinach soup

In a casserole saute the chopped onion in olive oil for a few minutes.

Add spinach and peeled potato cut into large pieces.

Pour the water and add the broth and bring to a boil.

Lower the heat and cook for 15 minutes.

Mix together and season with salt and pepper.

Serve in bowls and sprinkle with some toasted buckwheat seeds.
