Pearl sugar brioche

How about a super soft brioche with orange blossom fragrance and crisp pearl sugar ? This brioche is one of my favorites ! It does not contain too much butter , is not difficult, the rest period is not too long . Everything is made to have a homemade brioche quickly for tea time !

Pearl sugar brioche
Preparation time: 15 minutes, Resting time: 40 minutes , Cooking time: 25 min

- 500g flour
- 250g warm milk
- 1 egg
- 3 tbsp sugar
- 30g fresh bakery yeast
- 1 tsp salt
- 70g soft butter
- 2 tbsp water of orange flower + 1 tbsp for the egg wash
- 1 egg yolk for the egg wash
- pearl sugar

PREPARATION
- Put in your food processor the ingredients in the order listed ( except butter ) and start kneading program. Without food processor, knead all ingredients without butter by hand.
- When the dough starts to form a ball , add butter .
- Remove the dough from the food processor and make a ball .
- Divide the dough in 3 balls with the same weight.
- Lengthen the balls into long strands .
- Weld the 3 strands and braid . Hide the welds under the braid and place in a cake tin .
- Let rise 40 minutes covered with a towel in a warm place .
- Once the lifting braided brioche has raised, brush with egg yolk mixed with 1 tbsp of water of orange flower.
- Sprinkle with pearl sugar.
- Put in a cold oven and bake for about 25 minutes at 180 °.
